I’ve never understood the generalisations people make about salads. That salads are boring bowls of rabbit food people eat when they’ve jumped on the ‘dieting’ bandwagon. HUH? I don’t know what salads they’ve been eating, but I know I LOVE salads. Probably because I have commitment issues and I don’t like having to stick to just one flavour, I like allllllll the flavours. Salads are basically a bowl full of different flavours and textures that come together to create an explosion of yummy goodness. Well at least that’s how I see them?
This salad is no different. It’s tangy with balsamic, sweet with pomegranate, and crunchy with lightly toasted almonds. It’s nutrient dense, hello kale, and packed full of protein to keep you feeling full! I used Pure Naturally coconut oil to massage the kale, which not only added a whole lotta healthy fats but gave the salad a beautiful coconut flavour. To be perfectly honest, I don’t know what else you’d want in a salad? It’s pretty bloody perfect. A great lunch option, or dinner if you’re feeling like something light but satisfying! You could even keep leftovers for lunch the next day. Rabbit food? Absolutely dreamin’.
