Spiced Beetroot Latte Porridge

It’s been a hot minute since I’ve uploaded a recipe here guys I know. I’ve been somewhere between ‘living in the moment’, procrastination and feeling inadequate. They all kind of intertwine, so let me break it down for you. As a self diagnosed perfectionist (I’m deeming it a condition) and seriously passionate human, I can often get caught up in the hustle and grind of trying to get EVERYTHING done. Putting every minute of the day to use, and feeling overwhelming guilt when I hit an inevitable wall and watch an entire series of netflix – you’ve been there too stop judging me. I was stuck in this incredibly exhausting cycle, and while I was getting SO much work done, and feeling like an absolute boss girl, everything else kind of fell through the cracks. I lacked balance, and for over a year I couldn’t see it.

Meeting my absolute honey of a human Thomas has been one of the best things for me. I’ve never been more present than I am with him, and I make a huge effort to try and stay off my phone/not do hours of work when I’m with him. When we’re together, that’s our time. My social life actually exists these days and I no longer feel the need to squeeze every second of the day full of work. However; yes, there’s always a however. While I’m having the time of my life off on adventures, and just generally making all the memories I can with my bestest pals… I know my work isn’t as frequent.

What does this have to do with the delicious bowl of oats up above? Well, this is my sorry, but not really sorry for being human and for being not so great at the balancing act that is life – Here’s a recipe, pls forgive me. The recipe for the Spiced Beetroot Latte Porridge calls for any kind of plant milk, the porridge pictured was made with soy milk and Oh My Days. It made the creamiest porridge I’ve ever had and I enjoyed every last spoonful. The beetroot latte powder, while not necessary is definitely advised if you wanna start your day with a little more pink. I picked it up pretty cheap in the health food isle at Woolworths, so it’s nothing too fancyyyyy.

Spiced Beetroot Latte Porridge Warm up with a bowl of nourishing... PINK porridge!

  • Prep Time: 1m
  • Cook Time: 10m
  • Total Time: 12m

Ingredients

  • 1/2 cup Rolled oats
  • 1 1/2 cups Plant based milk (coconut, almond, soy etc)
  • 1 teaspoon Chia seeds
  • 1 tablespoon Liquid sweetener (rice malt, honey, maple syrup)
  • 1 teaspoon Beetroot latte mix

Toppings

  • Strawberries, pomegranate, cinnamon, banana, coconut, extra milk, extra honey

Instructions

  1. Add all ingredients except toppings into a small-medium saucepan and warm over a medium heat, until it bubbles.
  2. Once it bubbles make sure you are stirring constantly to avoid the porridge sticking to the bottom.
  3. The porridge is ready once most of the milk has been soaked up but it's still creamy.
  4. Remove from the heat and pour into 1-2 bowls depending on the serving size. Add toppings, pour a little extra milk and serve!
