Ingredients
- 1 teaspoon ground ginger
- 1 large egg
- 2 tablespoons maple syrup
- 2 tablespoons coconut oil, melted
- 1/4 cup molasses
- pinch of salt
- 1/2 cup coconut flour
- 1 1/2 cups almond flour
- 1 tablespoon tapioca flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 180ºC or 160ºC fan forced and line a baking tray with baking paper
- In a mixing bowl, whisk together all the dry ingredients
- In a seperate bowl, whisk together all the wet ingredients, then pour into the dry mixture
- Mix until completely combined and a dough forms, you may have to get your hands dirty!
- Place the dough in-between two sheets of baking paper or cling wrap and use a rolling pin to get the dough to your desired thickness. Once rolled, place in the fridge for approximately 30 minutes to firm up
- Once firm, remove from the fridge and take the top layer of paper or cling wrap off, then using a cookie cutter cut out as many shapes as you can. Place cookies on the prepared baking tray
- Place tray in the oven and cook for 10-12 minutes, or until golden. Keep an eye on them!
- Remove from the oven and allow to completely cool before icing or storing in a container
