Can we just take a minute to appreciate the colour of this Healthy Beetroot Hummus? Literally every time I get in the kitchen with beetroot I’m amazed by how flipping beautiful it is! I can’t even deal. I absolutely LOVE beetroot, to the point where I’d happily have a bowl full of it… weird? Probably. This is another dip recipe that can be put together in literally no time at all, minimal dishes and an easy clean up! Only recommendation I have, wear gloves. While I love the colour in my food, pink stained hands is another thing.
Beetroot may have a beautiful colour, but it’s not just a pretty… face? Beetroot contains betalaines which are water soluble antioxidants that are said to have chemo-preventive abilities against some cancer cells. It’s also super low in calories so it’s a great option to fill up on while not overloading on calories! Beetroot also contains an array of minerals including phosphourous, calcium, magnesium and potassium… to name a few! So the next time you’ve got a get together with friends or family, wow them with this delicious, healthy beetroot hummus!
