Spring has seriously sprung. The sun is shining, the birds are chirping and the days are longer. With warmer weather comes the cravings for light, fruity breakfasts. If you’re a long time Healthy Karma reader you would know that I had a real thing for oats a while back, like a proper obsession. While I still love a bowl of oats here and there, I’ve been making an effort to steer away from grains. Shocker I know. Unfortunately the ol’ digestive system is having a hard time at the moment, so for now, I’m a grain free gal. This means finding alternatives for all my grain faves, one of those being granola! Traditionally, when the warmer months came around, I would switch my hot bowl of oats for a bowl of granola. So it only seemed right to try and recreate the traditional granola, without oats!
Though I was a little skeptical that it wouldn’t quite measure up, I am honestly so happy with how it turned out! It’s crunchy and sweet with a delicious caramelised flavour. I have been loving having mine with coconut yogurt, fresh berries and almond milk, soooo delicious! Give it a go and I promise you won’t be disappointed!
