“Carrot for breakfast? Ummm no thanks” – was the response I received from my carrot cake loving boyfriend Chris. When he brings home the store bought, refined, full of sugar version he tries to tell me it’s a ‘carrot loaf’, as if calling it a loaf makes it any better. Points for effort and creativity I guess? I have made these carrot cake overnight oats for myself many times over the years, and honestly I think it’s delicious. So when Chris got into this carrot cake loving phase, we all have food phases there’s no shame here people, I thought I’d make this healthier version!
Here’s me being girlfriend of the month and he turns his nose up at the carrot? Well, after convincing him it was YUM and basically forcing a spoonful in his mouth – HE LOVED IT. Yes! God I love when I’m right. “This is actually pretty good”, you bet it is, and not only that, it is ridiculously easy to put together. Literally throw everything into a jar, shake it up and pop it in the fridge overnight. Too easy.
